| Ingredients:
1 package (19 to 21 ounces) brownie mix 1 cup milk 1/4 cup instant coffee 1 (12 ounce) frozen whipped topping, thawed 2 packages (3.4 ounces) cheesecake instant pudding & pie filling 20 chocolate creme-filled sandwich cookies, chopped (2 cups) 2 tablespoons semi- sweet chocolate, grated 1/4 tsp. cinnamon
1. preheat oven to 350 (F). lightly spray a cake pan with nonstick cooking spray. Prepare brownie mix according to package, pour batter into cake pan spreading evenly. Bake 25 to 30 minutes or until they are done. Cool completely. 2. in a bowl combine milk and instant coffee; stir until dissolved. add half of the whipped cream and all of the pudding mix; whisk until smooth. Coarsly chop the cookies, fold into the pudding mix an dspread filling evenly over the brownies. 3. spread the rest of the whipped cream over the brownies. grate the chocolate over the brownies and sprinkle with the cinnamon. Refridgerate for 30 min. 4. EAT!

2 to 4 ham hocks 1 onion diced (small) garlic bay leaf chicken broth 1 can pinto beans 1 can navy beans 1 can great northern beans
In a crock pot (or soup pot) place your ham hocks. Add the beans (drained but not rinsed), the onion (you can use more onions if you like) and 1 to 2 tsp. garlic. Cover with Chicken Broth (probably about 2 to 4 cups). Add a bay leaf and simmer on low for 6 to 8 hours (less time if it's in a soup pot?). Before serving you'll have to remove the ham hocks, take off the skin and remove the meat from the bone. Chop the meat into bite size pieces and then add them back to the bean. Simmer another 20 to 30 minutes before serving. This is great with Corn Bread!

| 1 lb. ground beef 1 onion diced. minced garlic 2 cans beef consume soup sour cream
In a frying pan cook the ground beef and the diced onion. Once that is cooked you can either add it to the crock pot or to a soup pot. Add 1 to 2 tsp. minced garlic and the beef consume soup. If it's in the crock pot let it cook on low (the longer the better). If it's in a soup pot let it bubble on low until hot and the flavors are combined (at least 1/2 an hour). Shortly before serving stir in 1 to 1 & 1/2 cups of sour cream. Serve over noodles or mashed potatoes.

| 4 large tortillas 1 lb ground beef 1 medium onion diced 1 can diced tomatoes 1 (7 oz) can green chilis 1 can black beans shredded cheese taco seasoning enchilada sauce
First brush the tortilla's with olive oil and bake in a 350 oven for 7 minutes or until slightly crispy. In a large skillett brown the ground beef and onion together. Once they are cooked drain the grease and add the taco seasoning. mix in tomatoes, green chilis and black beans. Top the baked tortilla's with the enchilada sauch (instead of pizza sauce)...then top with the ground beef mixture and cheese. Bake for another 5 to 6 minutes or until cheese is melted.

| 1 lb ground beef (if you like more meat then use 1.5 to 2 lbs) 1 white onion diced 1/2 to 1 green pepper diced 1/2 red bell pepper diced 1 can petite diced tomatoes 1 can rotel (hot or mild depending on your taste) 2 cans black beans (drained and rinsed) 1 can corn 1 can diced green chilies (if you like it hotter you can use jalapeno's) 4 cups (or 1 box) beef broth 4 Tbsp. Chili powder 4 tsp. ground cumin 1 bay leaf 2 to 3 tsp. minced garlic
Saute beef, onions, pepper and garlic...then add to the crock pot (or soup pot) along with all the other ingredients. Simmer for 3 to 4 hours before serving. The longer this cooks together the better it tastes. Serve with cheese, sour cream and Frito's  | | |
